Chocolate Chip Zucchini Cake

1-1/2 cups sugar
1/2 cup margarine or butter, softened
1/4 cup oil
1 teaspoon vanilla
2 eggs
2-1/2 cups flour
1/4 cup cocoa
1 teaspoon baking soda
1/2 cup buttermilk
2 cups shredded zucchini
1/2 to1 cup semi-sweet chocolate chips
1/2 cup chopped nuts (if desired)

Grease and flour 13x9 inch pan. In large bowl, combine sugar, butter, oil, vanilla and eggs; beat well. Add flour, cocoa, baking soda and buttermilk; blend well. Fold in zucchini, chocolate chips and nuts. Spread in pan. Bake at 350° F. for 35-45 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost as desired.

Butter Cream Frosting

2/3 cup butter (no substitute), softened
4 cups powdered sugar
1 teaspoon vanilla
1/3 cup cocoa
2 to 4 tablespoons milk

In large bowl, beat butter until light and fluffy. Blend in the cocoa. Gradually add powdered sugar, beating well. Beat in vanilla and milk, adding enough milk for desired spreading consistency.

 

Jesus Biscuits

Each items represents how Jesus' body was prepared for burial.

Need:
Large Marshmallows
Melted Butter
Sugar/Cinnamon Mixture
Cans of Crescent Rolls

1. Open can of crescent rolls and separate into triangles. The rolls represent the linen wrapping used in covering the dead.

2. Dip and roll one marshmallow representing Jesus' body into the melted butter. The butter represents the oils used in anointing the body.

3. Roll the marshmallow in the sugar/cinnamon mixture. The mixture represents the spices used in burials.

4. Place the marshmallow in the center of the triangle. Fold and pinch the edges tight. Put each crescent-wrapped marshmallow on the lightly greased cookie sheet.

5. Bake the rolls as directed on the package. The oven represents the tomb.

When cooked, the marshmallow melts leaving only the puffed crescent roll. This demonstrates how Jesus rose from the dead. All that remained in the tomb were the linen wrappings.

 

Monkey Bread

2 cans Pillsbury Grand Biscuits
1/2 cup sugar
1/8 cup cinnamon
1 stick butter
1/2 cup chopped nuts
1 cup brown sugar

Cut each biscuit in quarters. Shake in bag with cinnamon and sugar mixture. Arrange in bundt pan that has been sprayed with cooking oil. Melt butter and mix in brown sugar. Bring to a boil and lower heat. Cook approximately 2 minutes. Mix in nuts. Pour over biscuits, lifting edges to allow mixture to reach bottom of pan. Bake at 350º F. for 30 minutes.

 

Waffles Or Pancakes

2 cups good biscuit mix
1/2 cup oil
1 egg
1-1/3 cups club soda

Combine all ingredients pour into hot waffle iron or onto hot griddle for hot cakes.
